Maltose is short for maltose disaccharide, also known as D- maltose, caramose. A disaccharide consisting of two molecules of α-D-glucose connected, condensed, and dehydrated by an α-1, 4-glucoside bond. The molecule also has a free hemiacetal hydroxyl group, which is a reducing sugar and, like glucose, can make the Doren reagent react positively with the Fehring reagent. This alpha-1, 4-glycoside bond forms a long chain called amylose, with an average molecular weight of 20,000 to 200,000.
